With the winter months coming in, warm up as the cold nights draw in with a comforting bowl of homemade soup.
This thick, creamy tomato soup that’s soothing, nourishing and full of flavour. You can have this as a starter, or serve with warm bread for a light meal after a long day.
□ 1 clove of garlic, chopped
□ 1 small head of red onion, chopped
□ 1 tin of chopped tomatoes, 400g
□ 1 red bell pepper, roasted, peeled and deseeded
□ 500ml of vegetable stock
□ 2 tsp of salt
□ 1 tsp of black pepper
□ 1 tsp of dried oregano
□ 1 tbsp of sugar
□ 3 tbsp of Curtice Brothers Organic Ketchup
□ 50g of butter
□ Fresh basil
□ Black pepper
1. In a soup pot, add all of the ingredients except butter, and start cooking on a medium heat
2. Let the soup simmer for about 30 minutes
3. Transfer to a blender and blend until smooth
4. Add butter and stir
5. Serve with Parmesan, basil and black pepper
